As if that weren’t already convincing enough, Dalsass has an additional menu with 21 incredible dishes. He keeps a close eye on what is available on the market and uses fresh, seasonal ingredients of the best quality. Talvo’s wine cellar is a stunning treasure trove with more than 800 exquisite labels. In his tenth year at Talvo (built in 1658), the top chef earned 18 GaultMillau points and one Michelin star.
